The Lebanese cucumber has green epidermis, white flesh, and a length of 12 to 15 centimetres. It has a juicy consistency and a rind that does not require peeling.
What to search for
Select cucumbers with a firm epidermis and uniform hue. With telegraph and short cucumbers, the colour is significant; a vibrant green colour indicates that the cucumbers are fresh, while a drab green or yellow hue indicates that they are old.
Summer is when petite and apple cucumbers are most abundant.
Keep in the refrigerator’s warmest location and consume promptly. During the cooler months, they can be stored on the settee. Cucumbers from Lebanon should always be refrigerated.
How to get ready
Young cucumbers have a mild and tender skin, so peeling them is superfluous. Cucumbers of the Telegraph, Lebanese, and cocktail varieties require no peeling. European cookbooks may recommend skinning and removing the seeds, but this step is typically unnecessary.
Ways to consume
Raw cucumbers are most ubiquitous as a salad ingredient. Cucumber slices can be used as crackers when serving snackss with beverages. Additionally, cucumbers can be used in chilled soup. They may be minced and sautéed, or they may be juiced.
