The eryngii or king oyster mushroom, also known as the king trumpet, has a succulent texture and umami flavour. They are native to the Mediterranean, but are widely used in Asian cuisine. This impressive mushroom ranges in length from 10 to 15 centimetres, has a refrigerator expiration life of approximately one week, and retains its shape when cooked. The texture is sometimes compared to abalone or scallops, making them an intriguing option for vegetarians; they are often marketed as’mushroom steaks’ or’vegan scallops’.
